A Winter Favorite: Chicken Pot Pie

Now that the holidays are behind us, the family and I are snuggling in for the winter.  Too cold temperatures and windy, gloomy days just make us want to snuggle in deeper and avoid the outdoors all together. 

It's the perfect time of year to dust off the old recipe book and look up comfort food recipes like chicken pot pie that haven't been used since last winter.

And Oh My is it delicious!


Now I'm sure it's not the most healthy meal you could find but it sure does make you feel warm and well fed.

I have always used the recipe from my Betty Crocker's Cookbook - - a wedding gift from my mother.  It's easy and delicious.

Chicken Pot Pie

1 package frozen mixed veggies (10 oz)
1/3 cup butter
1/3 cup flour
1/3 cup chopped onion
1/2 teaspoon salt
1/4 teaspoon pepper
1 3/4 cups chicken broth
2/3 cup milk
2 1/2 to 3 cups cut-up cooked chicken
2 pie crusts

1.  Rinse mixed veggies in cold water to thaw.

2.  Melt butter in saucepan over medium heat.  Stir in flour, onion, salt, and pepper.  Cook, stirring constantly, until mixture is bubbly;  remove from heat.

Stir in broth and milk.  Heat to boiling, stirring constantly.  Boil and stir until mixture thickens and reduces a little.   Stir in chicken and veggies;  remove from heat.

3.  Heat oven to 450.

4.  Prepare pie crust.  Place one pie crust in a greased pie pan.  Pour chicken mixture into pie pan.  Place second pie crust over the chicken mixture.  Turn edges of pie crust under and flute.  Cut three or four steam holed into the top pie crust.

5.  Bake for 35 minutes until golden brown. 

6.  Enjoy the yummy, deliciousness after it's cooled five minutes.

  1. Pot pies have become a favorite for my grandchildren...me too, but the sodium level in commercially prepared pies make them out of limits for me. I love recipes that I can tweak the sodium in, are easy for me, quick for them and that we all can enjoy. I'll be giving these pot pies a try!

  2. That looks so yummy, Robin! Do you make your own pie crusts? I cheat and use the ones already in the little tin plate. Our comfort food this past week was potato soup, I've combined several recipes to make my own and we are loving it - will post about that perhaps tomorrow. Your pictures, as always, are beautiful.

  3. Good Morning. This is perfect timing . . . we are having chicken for dinner tonight and I was already trying to think of what to do with the left overs. My husband loves pot pies and I have not made one in over a year. I just won;t think about it. He's going to enjoy the leftover night more than dinner tonight, thanks to your inspiration.

  5. I have never made chicken pot pie, but I love it. There was a restaurant near by workplace in San Diego called The Chicken Pot Pie Restaurant. I loved to go there with co-workers for a pot pie and one of their huge biscuits. I don't think I have eaten a chicken pot pie in 40 years.
